  • 1 (32 oz) quart chicken stock (+1 extra cup of broth if using raw chicken)
  • 4 cups shredded cooked chicken (or 1.5 lbs raw, skinless chicken breasts or thighs)
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme, optional)
  • 2 teaspoons freshly cracked black pepper (or to taste)
  • Salt (to taste)
  • 2 cups all-purpose flour
  • 1 tablespoon, plus 1 teaspoon, baking powder
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon salt
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme, optional)
  • 3/4 cup (6 oz) whole milk
  • 4 tablespoons butter (melted)

Instructions

  1. Melt butter in a Dutch oven over medium-high heat. Sauté onion, carrots, and celery for 5 minutes; add garlic and cook 1 more minute.
  2. Stir in flour to create a roux; cook for 1 minute. Gradually add evaporated milk and chicken stock while stirring until thickened.
  3. If using raw chicken, add extra broth and simmer until cooked through before shredding. For cooked chicken, boil the mixture then stir in shredded chicken with thyme and pepper.
  4. In a mixing bowl, combine flour, baking powder, salt, thyme, milk, and melted butter to make dumpling dough.
  5. Drop spoonfuls of dough into the simmering soup; cover and cook for 15-20 minutes until fluffy.
