Ingredients
- 3/4 cup unsalted butter
- 1 cup light brown sugar
- 2 egg yolks
- 2 tsp vanilla
- 1/2 cup canned pumpkin puree
- 1 3/4 cups all-purpose flour
- 1 tbsp pumpkin pie spice
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup granulated white sugar
- 1/2 tsp pumpkin pie spice for sugar coating
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a small bowl, mix granulated sugar with 1/2 tsp of pumpkin pie spice for coating.
- Cream softened butter and sugars until smooth; mix in egg yolks and vanilla.
- Fold in pumpkin puree until combined.
- In another bowl, whisk flour, baking soda, baking powder, salt, and remaining pumpkin pie spice.
- Gradually add the dry ingredients to the wet mixture until just combined.
- Scoop dough onto prepared baking sheet and sprinkle with spiced sugar.
- Bake for about 12 minutes until edges are golden; cool on wire rack.
