  • 2 Tbsp extra virgin olive oil
  • 1 medium yellow onion, chopped
  • 2 ears corn, kernels removed
  • 2 cups grape tomatoes
  • 2 medium zucchini, sliced
  • 3 cloves garlic, minced
  • 1 1/4 cups marinara sauce
  • Fresh basil and parsley for garnish

Instructions

  1. Boil a large pot of lightly salted water; cook tortellini according to package directions, stopping one minute short.
  2. In a sauté pan, heat olive oil over medium-high heat. Sauté onion until softened, then add corn and cook for an additional 2 minutes.
  3. Stir in grape tomatoes; sauté until they begin to burst. Add zucchini and garlic; cook until all vegetables are tender.
  4. Drain tortellini (reserve some pasta water) and add to the vegetable mixture along with marinara sauce; toss gently to combine.
  5. Season with salt and pepper; garnish with parmesan cheese, basil, and parsley before serving.
