  • 20 oz refrigerated three cheese tortellini
  • 2 Tbsp extra virgin olive oil
  • 1 medium yellow onion, chopped
  • 2 ears corn, kernels cut from cobs
  • 2 cups grape tomatoes
  • 2 medium zucchini, sliced
  • 3 garlic cloves, minced
  • 1 1/4 cups marinara sauce
  • Salt and pepper to taste
  • 1/2 cup finely shredded parmesan cheese
  • Fresh basil and parsley for garnish

Instructions

  1. Cook the tortellini in boiling salted water according to package directions but stop one minute shy.
  2. In a sauté pan, heat olive oil over medium-high heat. Sauté chopped onion for about 3 minutes until softened.
  3. Add corn and cook for an additional 2 minutes; then add tomatoes and sauté for another 3 minutes.
  4. Stir in zucchini and minced garlic; cook until tender (about 6-8 minutes).
  5. Drain the tortellini (reserve some pasta water) and combine in the pan with sautéed veggies. Pour in marinara sauce and toss gently over heat for 1-2 minutes.
  6. Season with salt and pepper; stir in half of the parmesan cheese along with basil and parsley.
  7. Serve hot, garnished with remaining parmesan.
