Ingredients
- 1 large head cauliflower, chopped into florets
- 1 (15 oz) can chickpeas, rinsed and drained
- 2 cups cooked white basmati rice
- 1 Tbsp. curry powder
- 2 tsp. paprika
- 1 tsp. ground cumin
- 1 tsp. kosher salt
- 1/2 tsp. black pepper
- 3 Tbsp. extra-virgin olive oil
- 1/2 cup fresh cilantro leaves
- 1/2 cup fresh parsley leaves
- 1/4 cup tahini
- 2 Tbsp. fresh lemon juice
- 1/2 tsp. minced fresh garlic
- 1/4 tsp. ground cumin
- 1/4 tsp. kosher salt
- 1/4 tsp. black pepper
Instructions
- Preheat oven to 425°F (220°C).
- Toss cauliflower florets with olive oil and season with spices. Place on a baking sheet.
- Coat chickpeas in olive oil and spices; spread on another baking sheet.
- Roast both for about 30–40 minutes until crispy and charred.
- Blend Green Tahini Sauce ingredients until smooth.
- Assemble bowls with rice as the base, topped with roasted cauliflower and chickpeas, and drizzle with sauce.
