  • 2 cups shredded carrots
  • 8 oz cream cheese
  • 8 Tbsp butter
  • 1 cup powdered sugar
  • 1 tsp vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 375°F and line a jelly roll pan (10×15 inches) with parchment paper.
  2. In one bowl, whisk together flour, baking powder, baking soda, salt, and spices. In another bowl, combine eggs, sugar, oil, and vanilla; mix in dry ingredients and fold in shredded carrots.
  3. Spread batter evenly in the pan and bake for 10-13 minutes until it springs back when touched.
  4. Roll the cake while warm in the parchment paper and let it cool.
  5. Beat cream cheese and butter together; add powdered sugar and vanilla until smooth.
  6. Unroll cooled cake, spread frosting over it, re-roll tightly without parchment paper, then chill before slicing.
