  • 2 cups shredded carrots
  • 8 oz cream cheese
  • 8 Tbsp butter
  • 1 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 375°F. Line a jelly roll pan with parchment paper.
  2. In a bowl, mix flour, baking powder, baking soda, salt, and spices.
  3. In another bowl, whisk eggs, sugar, oil, and vanilla until combined. Gradually add dry ingredients and fold in shredded carrots.
  4. Spread batter in prepared pan and bake for 10-13 minutes until set.
  5. Roll cake in parchment while warm and cool for 10 minutes.
  6. Beat cream cheese and butter until smooth; add powdered sugar and vanilla.
  7. Unroll cooled cake, spread frosting (leaving one inch at the end), then re-roll tightly.
  8. Chill for at least an hour before slicing.
