  • 1 pound ground beef
  • 1 pound ground pork
  • 1 large egg
  • 1 cup ricotta cheese
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup pork rind crumbs
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 1 1/2 teaspoons minced garlic
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
  2. In a mixing bowl, combine ground beef, ground pork, egg, ricotta, Parmesan, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined and shape into meatballs.
  3. Roll each meatball in pork rind crumbs until fully coated and place in the prepared baking dish.
  4. Bake for about 20 minutes or until golden brown.
  5. In a skillet over medium heat, melt butter and sauté minced garlic until fragrant. Add heavy cream, seasoning with salt and pepper; let it thicken slightly before stirring in Parmesan.
