  • 1 pound ground pork
  • 1 large egg
  • 1 cup ricotta cheese
  • 1/3 cup grated Parmesan cheese
  • 1 cup pork rind crumbs
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter
  • Minced garlic

Instructions

  1. Preheat oven to 400°F (200°C) and grease a baking dish.
  2. In a bowl, mix ground beef, ground pork, egg, ricotta cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper until combined.
  3. Form the mixture into meatballs and roll in pork rind crumbs.
  4. Bake for 20 minutes until golden brown.
  5. In a skillet, melt butter over medium heat, sauté garlic until fragrant, then add heavy cream, seasonings, and Parmesan until thickened.
  6. Toss baked meatballs in the sauce and serve warm.
