- 1–3 tbsp Cajun seasoning
- 1 large onion (diced)
- 2 cloves garlic (minced)
- 1 cup orzo pasta
- 1 cup chicken broth
- 1 cup spinach (shredded)
- ¼ cup heavy cream
- 3 tbsp Parmesan cheese
Instructions
- Season the chicken strips with Cajun seasoning and salt. Heat olive oil and butter in a chef’s pan over medium heat; add the chicken and cook until golden (5-7 minutes).
- Add onion and garlic; cook until softened (about 5 minutes). Stir in sun-dried tomatoes and tomato paste.
- Add the orzo and chicken broth; bring to a simmer, cover, and cook for about 20 minutes, stirring occasionally.
- Once orzo is tender, stir in spinach until wilted. Mix in heavy cream and Parmesan cheese until creamy.
