  • 13 tbsp Cajun seasoning
  • 1 large onion (diced)
  • 2 cloves garlic (minced)
  • 1 cup orzo pasta
  • 1 cup chicken broth
  • 1 cup spinach (shredded)
  • ¼ cup heavy cream
  • 3 tbsp Parmesan cheese

Instructions

  1. Season the chicken strips with Cajun seasoning and salt. Heat olive oil and butter in a chef’s pan over medium heat; add the chicken and cook until golden (5-7 minutes).
  2. Add onion and garlic; cook until softened (about 5 minutes). Stir in sun-dried tomatoes and tomato paste.
  3. Add the orzo and chicken broth; bring to a simmer, cover, and cook for about 20 minutes, stirring occasionally.
  4. Once orzo is tender, stir in spinach until wilted. Mix in heavy cream and Parmesan cheese until creamy.
