  • 3/4 cup light brown sugar (packed)
  • 1 teaspoon cinnamon
  • 2 tablespoons cake flour
  • 1 cup powdered sugar
  • 1/2 teaspoon cinnamon
  • 3 tablespoons unsalted butter (melted and cooled)
  • 2 1/2 tablespoons milk

Instructions

  1. 1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. 2. In a stand mixer, cream together butter, granulated sugar, and brown sugar until light. Add eggs and vanilla; mix until fluffy.
  3. 3. In another bowl, whisk dry ingredients together (cake flour, cornstarch, baking soda, baking powder, salt). Gradually mix into wet ingredients until combined. Chill dough for one hour.
  4. 4. Prepare the filling by mixing softened butter, brown sugar, cinnamon, and flour until smooth.
  5. 5. Scoop chilled dough and divide each portion in half. Place filling in the center and seal with the other half of the dough.
  6. 6. Bake cookies for 11–13 minutes until edges are golden. Cool before icing.
