Ingredients

  • 1 lb dried navy beans
  • 1/2 lb salt pork (or diced bacon)
  • 1 large yellow onion, diced
  • 2/3 cup molasses
  • 1/4 cup brown sugar
  • Dijon mustard
  • salt
  • black pepper

Instructions

  1. Pick over the beans and soak them overnight in cold water with kosher salt.
  2. Simmer the soaked beans for 30-45 minutes until tender; drain and reserve liquid.
  3. Preheat oven to 250°F.
  4. Score the salt pork and sear it in a Dutch oven until golden brown.
  5. Layer drained beans around the pork with diced onions on top.
  6. Mix molasses, brown sugar, mustard, salt, and pepper in a bowl; pour over beans.
  7. Add reserved liquid until beans are just covered.
  8. Cover and bake for 6-8 hours, stirring occasionally.
