Instructions
- Pick over the beans and soak them overnight in cold water with kosher salt.
- Simmer the soaked beans for 30-45 minutes until tender; drain and reserve liquid.
- Preheat oven to 250°F.
- Score the salt pork and sear it in a Dutch oven until golden brown.
- Layer drained beans around the pork with diced onions on top.
- Mix molasses, brown sugar, mustard, salt, and pepper in a bowl; pour over beans.
- Add reserved liquid until beans are just covered.
- Cover and bake for 6-8 hours, stirring occasionally.
