  • 1 recipe blueberry pie filling (about 3 cups homemade)
  • 1½ cups fresh blueberries
  • ½ cup powdered sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla paste
  • Zest and juice of 1 lemon
  • 1 teaspoon ground cinnamon
  • 3 uncooked 9" pie crusts
  • Egg wash (1 egg + 1 tablespoon water)
  • Coarse sugar for topping

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine blueberry pie filling, fresh blueberries, powdered sugar, cornstarch, vanilla paste, lemon zest and juice, and ground cinnamon. Mix well.
  3. Roll out two uncooked pie crusts and place one on a baking sheet.
  4. Pour the blueberry filling onto the crust evenly.
  5. Roll out the third crust, cut into strips to create a lattice pattern over the filling.
  6. Whisk together egg and water; brush over the lattice crust and sprinkle with coarse sugar.
  7. Bake for about 30 minutes until golden brown and bubbly.
  8. Allow to cool before slicing into squares.
