Ingredients
- 1 recipe blueberry pie filling (about 3 cups homemade)
- 1½ cups fresh blueberries
- ½ cup powdered sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla paste
- Zest and juice of 1 lemon
- 1 teaspoon ground cinnamon
- 3 uncooked 9" pie crusts
- Egg wash (1 egg + 1 tablespoon water)
- Coarse sugar for topping
Instructions
- Preheat oven to 375°F (190°C).
- In a mixing bowl, combine blueberry pie filling, fresh blueberries, powdered sugar, cornstarch, vanilla paste, lemon zest and juice, and ground cinnamon. Mix well.
- Roll out two uncooked pie crusts and place one on a baking sheet.
- Pour the blueberry filling onto the crust evenly.
- Roll out the third crust, cut into strips to create a lattice pattern over the filling.
- Whisk together egg and water; brush over the lattice crust and sprinkle with coarse sugar.
- Bake for about 30 minutes until golden brown and bubbly.
- Allow to cool before slicing into squares.
