  • 1 can corn (12 fluid ounces, drained) or fresh corn
  • 12 tablespoons chopped red onion
  • 2 tablespoons chopped fresh cilantro
  • Olive oil
  • Lime juice and zest
  • Honey
  • Chili powder
  • Garlic powder
  • Salt & pepper to taste

Instructions

  1. Cook the rice according to package directions; let cool.
  2. In a small bowl, whisk together olive oil, lime juice and zest, honey, chili powder, and garlic powder until combined.
  3. In a large bowl, mix cooled rice with diced avocado, black beans, corn, red onion, and cilantro.
  4. Pour dressing over the mixture; toss gently to coat.
  5. Season with salt and pepper to taste. Chill before serving for best flavor.
