  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 lb ground beef (80/20 or leaner)
  • 2 tbsp chili powder
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • Salt & pepper to taste
  • 1 can (6 oz) tomato paste
  • 1 can (15 oz) diced tomatoes
  • 2 cups beef broth (low-sodium)
  • 1 can (15 oz) red kidney beans
  • 1 can (15 oz) black beans

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté diced onion for about 3–4 minutes until soft.
  3. Add minced garlic; cook for another 30 seconds.
  4. Brown the ground beef, breaking it up as it cooks for about 5–7 minutes.
  5. Stir in chili powder, cumin, smoked paprika, salt & pepper; cook for one minute.
  6. Mix in tomato paste and then add diced tomatoes and beef broth; stir well.
  7. Incorporate red kidney beans and black beans; simmer uncovered on low heat for 30–40 minutes until thickened.
  8. Adjust seasoning as needed before serving hot with your favorite toppings.
