  • 4 egg yolks
  • 3/4 cup sugar (165g)
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 1/2 cups heavy cream (360g) or 4 egg whites
  • ~30 ladyfingers
  • 1 1/2 cups strong black coffee
  • 2 tbsp cocoa powder for dusting

Instructions

  1. Brew strong black coffee and let it cool slightly.
  2. In a mixing bowl, whisk egg yolks and sugar until pale and fluffy. Add mascarpone, vanilla, and salt; mix until smooth.
  3. In another bowl, whip heavy cream until stiff peaks form. Gently fold into the mascarpone mixture.
  4. Dip ladyfingers quickly in coffee and layer half in a baking dish. Spread half of the cream mixture on top. Repeat layers.
  5. Cover and refrigerate for at least 4 hours or overnight. Dust with cocoa before serving.
