  • 8 ounces canned unsweetened full-fat coconut milk
  • 2 cups blueberries
  • 1/4 cup unsweetened coconut water
  • Pure maple syrup (optional)

Instructions

  1. Puree strawberries in a blender with coconut water until smooth; set aside.
  2. Puree blueberries in the blender until smooth; set aside.
  3. In a bowl, whisk together coconut milk and maple syrup until smooth.
  4. Fill popsicle molds one-third full with strawberry puree; freeze for 10 minutes.
  5. Pour coconut milk mixture over frozen strawberry layer; freeze for another 10 minutes.
  6. Add blueberry puree on top; insert sticks and freeze overnight until solid.
  7. To serve, dip molds in warm water for easy release.
