  • 2 teaspoons sourdough starter
  • 3 tablespoons all-purpose flour
  • 5 teaspoons water
  • 1/4 cup active sourdough starter (100% hydration)
  • 1 1/3 cups + 2 tablespoons water
  • 2 teaspoons fine sea salt
  • 4 cups + 2 tablespoons bread flour

Instructions

  1. Prepare the starter mixture by combining sourdough starter, all-purpose flour, and water. Let it sit at room temperature for about 8 hours or overnight.
  2. In a large bowl, mix together active sourdough starter, water, and the prepared starter mixture. Gradually add in bread flour until no dry flour remains and let rest for 30 minutes.
  3. Sprinkle salt over the dough and knead gently until smooth.
  4. Cover and leave to bulk ferment for about 4 hours, stretching and folding every hour.
  5. Shape the dough into a round loaf and place it in a floured proofing basket for another hour.
  6. Preheat your oven to 450°F (232°C) with a Dutch oven inside for about 30 minutes.
  7. Transfer the risen dough into the hot Dutch oven, cover, and bake for 30 minutes; then remove the lid and bake for an additional 20 minutes until golden brown.
  8. Cool on a wire rack before slicing.
