- 3 tablespoons all-purpose flour
- 5 teaspoons water
- 1/4 cup active sourdough starter (100% hydration)
- 1 1/3 cups + 2 tablespoons water
- 2 teaspoons fine sea salt
- 4 cups + 2 tablespoons bread flour
Instructions
- Prepare the starter mixture by combining sourdough starter, all-purpose flour, and water. Let it sit at room temperature for about 8 hours or overnight.
- In a large bowl, mix together active sourdough starter, water, and the prepared starter mixture. Gradually add in bread flour until no dry flour remains and let rest for 30 minutes.
- Sprinkle salt over the dough and knead gently until smooth.
- Cover and leave to bulk ferment for about 4 hours, stretching and folding every hour.
- Shape the dough into a round loaf and place it in a floured proofing basket for another hour.
- Preheat your oven to 450°F (232°C) with a Dutch oven inside for about 30 minutes.
- Transfer the risen dough into the hot Dutch oven, cover, and bake for 30 minutes; then remove the lid and bake for an additional 20 minutes until golden brown.
- Cool on a wire rack before slicing.
