  • 2 medium sweet potatoes
  • 1 large yellow onion
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce (divided)
  • 1 medium head of broccoli
  • 1 Tablespoon olive oil
  • 1/4 teaspoon salt (divided)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chipotle powder (or chili powder)

Instructions

  1. Preheat oven to 400°F.
  2. Peel and chop sweet potatoes into 1/2" chunks and onion into pieces. Place on a lined baking sheet.
  3. Toss sweet potatoes and onion with olive oil, 1/4 teaspoon salt, garlic powder, and chipotle powder. Bake for 20 minutes.
  4. Add broccoli and chicken to the pan; brush chicken with 1/4 cup BBQ sauce. Bake for an additional 15-20 minutes until chicken is cooked through.
  5. Shred the chicken and mix with remaining BBQ sauce. Serve in bowls with roasted vegetables.
