  • 1/4 cup olive oil
  • 1 1/2 tablespoons fine sea salt
  • 2 teaspoons paprika
  • 1 cup BBQ sauce
  • 4 cups cool water for brine

Instructions

  1. Brine the Chicken: In a large mixing bowl, whisk together 4 cups of cool water and 1 1/2 tablespoons of sea salt until dissolved. Add chicken breasts and refrigerate for 30 minutes.
  2. Preheat the Grill: Heat your grill to medium heat and brush grates with olive oil.
  3. Season the Chicken: Remove chicken from brine, pat dry, coat with olive oil, and sprinkle paprika on both sides.
  4. Grill the Chicken: Place chicken on the grill, baste with BBQ sauce, cook undisturbed for 5-6 minutes before flipping. Move to a cooler side of the grill after flipping, baste again, cover, and cook until internal temperature reaches 165°F.
  5. Rest and Serve: Remove from grill, brush with more BBQ sauce if desired, cover, and let rest for 5-10 minutes before serving.
