  • 2 pounds boneless, skinless chicken breasts
  • 1 ¼ cups mayonnaise
  • ⅔ cup Thai sweet chili sauce
  • 2 tablespoons honey
  • 2 teaspoons Sriracha
  • 1 tablespoon vegetable oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 4 cups prepared white rice
  • 2 cups red cabbage, thinly sliced
  • 1 large carrot, julienned
  • 1 medium cucumber, halved and sliced
  • 1 large avocado, thinly sliced
  • Fresh cilantro, chopped for garnish
  • Sesame seeds for garnish

Instructions

  1. In a mixing bowl, whisk together mayonnaise, Thai sweet chili sauce, honey, and Sriracha until smooth.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add cubed chicken seasoned with paprika, garlic powder, salt, and pepper. Cook for 5–7 minutes until golden brown.
  3. Reduce heat and stir the Bang Bang sauce into the cooked chicken until well-coated.
  4. Serve over warm rice in bowls and top with red cabbage, carrots, cucumber slices, avocado, cilantro, and sesame seeds.
