Ingredients

  • 12 slices of bread
  • 4 large eggs
  • 1 cup milk
  • ½ cup heavy cream
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon maple extract
  • 1½ teaspoons cinnamon (divided)
  • Optional: Powdered sugar and maple syrup for serving

Instructions

  1. Preheat your oven to 350°F. Grease a muffin tin with non-stick spray.
  2. Cut bread into 1-inch cubes and set aside.
  3. In a large bowl, whisk together eggs, milk, heavy cream, brown sugar, vanilla extract, maple extract, half the cinnamon, and nutmeg until smooth.
  4. Add bread cubes to the egg mixture and stir gently until well coated.
  5. Spoon the mixture into each muffin cup evenly.
  6. In a small bowl, mix granulated sugar and remaining cinnamon; sprinkle over muffins.
  7. Bake for about 20 minutes or until golden brown.
  8. Let cool briefly before serving with powdered sugar and maple syrup if desired.
