  • 1 red bell pepper, diced

  • 4 large eggs
  • 1 cup baby spinach
  • 4 tablespoons olive oil
  • 1 teaspoons dried oregano
  • 1 teaspoons sea salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In an oven-safe dish or ramekins, arrange the cherry tomatoes, bell pepper, red onion, garlic, and feta cheese. Drizzle with olive oil.
  3. Mix together the oregano, salt, thyme, black pepper, and red pepper flakes; sprinkle over the vegetables and feta.
  4. Bake for 25 minutes until the vegetables are tender.
  5. Stir in baby spinach until wilted. Create wells in the mixture and crack an egg into each well.
  6. Return to the oven for an additional 10 minutes or until eggs are set but soft.
