  • 1/4 cup grated parmesan cheese
  • 2 pounds chicken breast tenderloins
  • 2 large eggs
  • 1/2 cup honey
  • 2 tablespoons hot sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • extra virgin olive oil, for drizzling
  • 23 tablespoons hot sauce
  • 13 teaspoons cayenne pepper
  • 3/4 teaspoon chipotle chili powder
  • sea salt
  • fresh thyme, cilantro, or parsley, for serving

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. In a food processor, blend cornflakes, parmesan, smoked paprika, onion powder, garlic powder, and salt until fine crumbs form. Transfer to a shallow bowl.
  3. In another bowl, whisk together eggs and hot sauce. Coat chicken tenderloins in the egg mixture, then dredge in cornflake crumbs.
  4. Place coated chicken on the baking sheet and lightly drizzle with olive oil.
  5. Bake for 20-25 minutes until golden brown and crispy.
  6. While chicken bakes, combine honey, hot sauce, cayenne pepper, chipotle chili powder, onion powder, garlic powder, and salt in a saucepan over low heat until warmed through.
  7. Drizzle warm hot honey sauce over baked chicken before serving.
