  • 1 cup uncooked white rice
  • 1 and 1/3 cups low-sodium chicken broth
  • 3 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 2 teaspoons dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 and 1/2 teaspoons kosher salt (divided)
  • 1520 cranks fresh-ground black pepper
  • 2 tablespoons butter
  • 1/2 medium yellow onion (chopped)
  • 34 cloves garlic (minced)
  • 2/3 cup water
  • 1 lemon (cut into wedges)
  • Fresh parsley or thyme (optional garnish)

Instructions

  1. Preheat oven to 350°F.
  2. In a bowl, mix olive oil, brown sugar, smoked paprika, thyme, oregano, garlic powder, salt, and pepper; rub onto chicken legs.
  3. Sauté onion in butter until soft; add garlic briefly.
  4. Combine sautéed onion and garlic with uncooked rice in a baking dish.
  5. Pour hot chicken broth over rice mixture.
  6. Place seasoned chicken on top; cover with foil.
  7. Bake covered for 30 minutes; uncover and bake for another 20 minutes until cooked through.
