  • 4 egg yolks

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Crush saltine crackers until fine and mix with sugar and softened butter until it resembles dough.
  3. Press the mixture into an 8-inch pie pan and chill for 15 minutes before baking for about 18 minutes until golden.
  4. While cooling, whisk together egg yolks, sweetened condensed milk, and lemon juice until smooth.
  5. Pour the filling into the cooled crust and bake for another 16 minutes until set.
  6. Let cool completely before slicing and serve topped with fresh whipped cream.
