  • 4 skinless, boneless chicken breasts (about 1 ½ lb)
  • 12 asparagus stalks
  • 1 ounce chopped sun-dried tomatoes
  • 4 slices mozzarella cheese
  • Olive oil
  • Italian seasoning mix
  • Garlic powder
  • Smoked paprika
  • Sea salt
  • Pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season both sides of the chicken breasts with Italian seasoning mix, garlic powder, smoked paprika, sea salt, and pepper.
  3. Cut pockets into each chicken breast for stuffing.
  4. Roll three asparagus stalks with chopped sun-dried tomatoes in each slice of mozzarella cheese.
  5. Stuff each chicken breast with the mozzarella-asparagus rolls and secure openings with toothpicks.
  6. Heat olive oil in a cast-iron skillet over medium-high heat and sear each stuffed chicken breast for 3-5 minutes on both sides until golden brown.
  7. Transfer to the oven and bake for 15-20 minutes until the internal temperature reaches 165°F (74°C).
  8. Remove toothpicks before serving.
