  • 1 cup brown sugar
  • 3 large eggs
  • 1 cup vegetable oil (or half applesauce)
  • 3 cups all-purpose flour
  • 3 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 cups grated zucchini
  • 1 cup diced apple
  • 1 cup chopped walnuts

Instructions

  1. Preheat your oven to 325°F (163°C) and grease two loaf pans.
  2. In a bowl, mix together the dry ingredients: flour, cinnamon, salt, baking powder, and baking soda.
  3. In another bowl, beat together the eggs, vegetable oil (or applesauce), vanilla extract, white sugar, and brown sugar until smooth.
  4. Combine the wet and dry mixtures gently until just mixed; then fold in the grated zucchini, diced apple, and walnuts.
  5. Let the batter rest for five minutes before pouring it into the prepared loaf pans.
  6. Bake mini loaves for 35–40 minutes or full-sized loaves for about 55 minutes until a toothpick comes out clean.
  7. Cool in pans for 20 minutes before transferring to wire racks.
