  • 1 cup brown sugar
  • 3 large eggs
  • 1 cup vegetable oil (or half applesauce)
  • 3 cups all-purpose flour
  • 3 teaspoons ground cinnamon
  • 1 teaspoon salt

  • 1 teaspoon baking soda
  • 2 cups grated zucchini
  • 1 cup diced apple
  • 1 cup chopped walnuts

Instructions

  1. Preheat oven to 325°F (163°C) and grease two loaf pans.
  2. Grate zucchini and dice apples; set aside.
  3. In a bowl, mix flour, cinnamon, salt, baking powder, and baking soda.
  4. In another bowl, combine eggs, oil (or applesauce), vanilla extract, white sugar, and brown sugar until smooth.
  5. Gently fold the wet mixture into the dry ingredients until just combined.
  6. Add grated zucchini, diced apples, and walnuts; let rest for 5 minutes.
  7. Pour batter into prepared pans: bake mini loaves for 35-40 minutes and full-sized loaves for about 55 minutes or until a toothpick comes out clean.
