- 3 tablespoons granulated sugar
- 2 tablespoons light brown sugar
- 1 large egg yolk
- ½ teaspoon vanilla extract
- ½ cup fresh apple (diced)
- ½ cup all-purpose flour
- 1/4 teaspoon baking soda
- 1/8 teaspoon salt
- 3/4 teaspoon pumpkin pie spice
- 3 tablespoons all-purpose flour (for streusel)
- 1 ½ tablespoons unsalted butter (cold and cut into cubes)
- 1 ½ tablespoons light brown sugar (for streusel)
- 2 teaspoons granulated sugar (for streusel)
- pinch salt (for streusel)
- 1/4 teaspoon ground cinnamon (or pumpkin pie spice) (for streusel)
- 1 ½ tablespoons diced apples (reserved for streusel)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners.
- In one bowl, mix sour cream, pumpkin, egg yolk, and sugars until smooth.
- In another bowl, combine flour, baking soda, salt, and spices. Gradually add dry ingredients to the wet mixture.
- Fold in diced apples and fill the muffin cups halfway. Top with streusel made from flour, butter, sugars, cinnamon, and reserved apple pieces.
- Bake for 18 minutes or until a toothpick comes out clean.
