  • 24 ounces full-fat cream cheese
  • 2 large apples (Granny Smith or Gala)
  • 1/2 cup unsalted butter
  • 3 large eggs
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • Cinnamon
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch (or 2 tablespoons all-purpose flour)
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup quick oats
  • 1/4 cup unsalted butter (melted)
  • boiling water (for the water bath)
  • salted caramel sauce

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Prepare a 9-inch springform pan by wrapping it in foil and greasing it with cooking spray.
  3. Combine graham crumbs, melted butter, brown sugar, and cinnamon to form the crust; press into the bottom of the pan.
  4. Mix cream cheese, sugars, cinnamon, cornstarch, vanilla extract, sour cream, and eggs until smooth for the filling.
  5. In another bowl, toss sliced apples with brown sugar and cinnamon for the apple layer.
  6. Pour half of the cheesecake batter over the crust, layer with spiced apples, then add remaining batter.
  7. Bake in a water bath for about 55 minutes until set but slightly jiggly.
  8. Cool gradually in the oven before refrigerating for at least four hours.
