- 1 teaspoon cinnamon
- 1/2 cup quick oats
- 1/4 cup unsalted butter (melted)

Instructions
- Preheat your oven to 350°F (180°C).
- Prepare a 9-inch springform pan by wrapping it in foil and greasing it with cooking spray.
- Combine graham crumbs, melted butter, brown sugar, and cinnamon to form the crust; press into the bottom of the pan.
- Mix cream cheese, sugars, cinnamon, cornstarch, vanilla extract, sour cream, and eggs until smooth for the filling.
- In another bowl, toss sliced apples with brown sugar and cinnamon for the apple layer.
- Pour half of the cheesecake batter over the crust, layer with spiced apples, then add remaining batter.
- Bake in a water bath for about 55 minutes until set but slightly jiggly.
- Cool gradually in the oven before refrigerating for at least four hours.
