  • ½ medium onion (chopped)
  • 23 cloves garlic (minced)
  • 4 tablespoons all-purpose flour
  • 2 cups low sodium chicken or vegetable stock
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon paprika (optional)
  • 3 cups broccoli florets
  • 1 large carrot (grated)
  • 2 cups half & half
  • 8 oz grated cheddar cheese

Instructions

  1. In a large Dutch oven, melt butter over medium-high heat. Add chopped onion and cook until softened, about 3-4 minutes. Stir in minced garlic and sauté for another minute.
  2. Whisk in flour for 1-2 minutes until golden. Gradually add chicken stock, followed by broccoli florets, grated carrot, salt, pepper, and optional paprika. Bring to a boil, then reduce heat and simmer for about 15 minutes until vegetables are tender.
  3. Stir in half & half and grated cheddar cheese until melted. Adjust seasoning if needed.
  4. Serve hot with crusty bread or in a bread bowl.
